Tasty Avocado Toast

Out of all of the amazing vegan food I have been exposed to, this simple avocado toast recipe remains one of my favorite meals. Whenever my friends come over and ask for food, this is my go-to recipe. It is healthy and simple, but also tremendously flavorful.

INGREDIENTS (Yields 2 open face sandwiches)

  • 2 Slices of whole wheat sourdough bread
  • 1  Ripe avocado
  • 1Tsp. Fresh lemon juice
  • A pinch of salt
  • 1 Tsp. Olive oil
  • Fresh basil leaves
  • 1/4 Cup of cherry tomatoes
  • 1-2 Sun-dried tomatoes
  • Red pepper flakes

Optional: Pepitas and/or vegan Parmesan cheese (Vegan parmesan cheese recipe from the Minimalist Baker)

INSTRUCTIONS

  1. Slice 1 to 2 pieces of fresh whole-wheat sourdough bread and toast it until it reaches a golden brown color. 
  2. While the bread toasts, in a bowl, add the avocado and mash with lemon juice, olive oil, and salt. 
  3. Cut the cherry tomatoes in half, sun-dried tomatoes into tiny pieces, and the fresh basil into strips for garnish.
  4. Spread the avocado mixture onto the toasted bread slices. 
  5. Top the avocado toast with the cherry tomatoes, sun-dried tomatoes, basil, and pepper flakes. 
  6. Add any additional toppings if desired, my favorites are pepitas and vegan Parmesan cheese!
