Mango Zucchini Protein Smoothie Bowl
Smoothie bowls are one of the best meal ideas out there; they are incredibly versatile and tasty. I have been an avid smoothie bowl lover for a while now, but it was only until recently that I started experimenting with banana-less smoothie bowls. As much as I love banana, it occasionally upsets my stomach. So, in replacement to banana, I have been experimenting with frozen zucchini in my smoothie bowls! Zucchini is a wonderful ingredient because it has a mild flavor, is rich in many nutrients, it supports healthy digestion, and is a lower-carb, but still tasty, alternative to a banana. I never thought that such a delicious smoothie creation could be made without the creaminess and sweetness of a banana!
This smoothie bowl combination is ridiculously refreshing. As soon as I sampled it from the blender, I knew I had to add the recipe to the blog. This smoothie bowl is filled with superfoods such as mango and spirulina, is full of protein, and sneaks in a serving of vegetables without being able to tell! The addition of basil adds an additional component of freshness that leaves you craving more.
INGREDIENTS (Yields one smoothie bowl)
One medium zucchini, sliced and frozen
1/2 Heaping cup frozen mango
One serving of vanilla plant protein, I used Orgain protein
1/4 Tsp. spirulina powder
2 Fresh basil leaves
Water, coconut water, or non-dairy milk to blend
INSTRUCTIONS
Blend all ingredients together in a food processor or blender, and blend until smooth. Add in liquid of choice in small increments; use just enough to successfully blend the mango and zucchini. The thickness of the smoothie bowl will depend on the amount of liquid used.
Transfer to a bowl and top with you favorite toppings! Some of my favorites for this recipe are cacao nibs, mango, fresh berries, and cereal.
